BASIL PESTO
Ingredients
- 1 clove of garlic, crushed
- 1 large bunch of fresh basil (approx. 40g)
- 50g pine nuts
- 3 tbsp extra virgin olive oil
- 50g finely grated Parmesan cheese
- 1 lemon
Preparation
- Tear basil from stalks and place into a food processor with pine nuts, blitz until you’ve made a course paste
- Add Parmesan, olive oil and a squeeze of lemon juice, blitz until just combined
- Add in garlic and season to taste
- Add a splash of water if required
- Blitz pesto until smooth
