BASIL PESTO

Ingredients
  • 1 clove of garlic, crushed
  • 1 large bunch of fresh basil (approx. 40g)
  • 50g pine nuts
  • 3 tbsp extra virgin olive oil
  • 50g finely grated Parmesan cheese
  • 1 lemon
Preparation
  • Tear basil from stalks and place into a food processor with pine nuts, blitz until you’ve made a course paste
  • Add Parmesan, olive oil and a squeeze of lemon juice, blitz until just combined
  • Add in garlic and season to taste
  • Add a splash of water if required
  • Blitz pesto until smooth
