Mashed cauliflower is basically a creamy cauliflower purée. It makes an amazing low-carb, keto, VLCD approved alternative to mash potato.
Ingredients
- 1 cauliflower; cut into florets
- 4 garlic cloves, crushed
- 1/3 cup buttermilk
- salt and pepper to taste
- 1 tbsp butter (suitable for people on maintenance or phase four only)
Preparation
- Steam or boil cauliflower and garlic until cooked through (soft)
- Drain cauliflower and buttermilk, salt, and pepper
- Purée with a bar mix or blender (be careful not to over-process, this would make cauliflower soup)
Serves 4
